Exploring the impact of Bacteriocins on microbiome, resistome, prevalence of Multi-Drug Resistant Bacteria and Shelf-life of poultry carcasses

This research project aims to address critical concerns surrounding the safety and quality of poultry products in Canada. Poultry consumption is central to the Canadian diet, but the presence of Multi-Drug Resistant (MDR) bacteria, poses substantial threats to both animal and human health. This project aims to study the potential of bacteriocins to reduce the prevalence of MDR bacteria on poultry carcasses and to extend their shelf life during storage. Specific objectives include:
Characterize the microbiome and resistome of Canadian poultry carcasses to identify MDR bacteria
Study the effectiveness of bacteriocins against isolated MDR bacteria
Evaluate the impact of bacteriocins on poultry product shelf-life and MDR bacteria prevalence
The selected candidate will work under the supervision of Dr. Ismail Fliss at the department of Food Science at Laval University (Québec-Canada) in collaboration with Drs. Burton Blais and Catherine Carrillo at Canadian Food Inspection Agency (CFIA) in Ottawa. This three-year project is funded by CRIBIQ, and RITA and the selected candidate will receive a 24,000$/year scholarship for three years.
Research-based MSc in Food Science/Food Microbiology and closely related field
Experience in metagenomics studies will be considered an asset
Excellent written and oral communication skills (French or English)
